Boerenkool Met Worst

Connecting to my Dutch roots, I set out to make out my first Dutch comfort food dish. This recipe was cooked during I was recovering from a cold and it definitely helped me feel better. In the Netherlands boerenkool usually contains potatoes and vegetables stewed and smashed together. I made a Boerenkool Met Worst Hutspot (Kale and Potato Smash with Sausage).


The ingredients are simple and healthy:
– One bunch of Kale
   – (fresh then frozen overnight)
– 2 handfuls of fingerling potatoes
– 1 onion
– 1 lb of Turkey Sausage
– Garlic
– Salt & Pepper
– Water

My variations on this dish call for:
– Sweet Potatoes
– Chicken
– Eggs
– Wheat Toast


Directions:
1. Freeze Kale Overnight
2. Mince garlic (amount your preference)
3. Chop Onions
4. Sautee olive oil garlic and onions until mixture is aromatic and onions are transparent
5. Chop potatoes for faster cooking and add to garlic/onions
6. Add water until pot is filled just above the top of the potatoes
7. Add frozen kale (frozen kale should just crunch apart in your hands, and will cook down significantly)
8. Bring to a boil and then cover and let steam
9. Stir occasionally
10. Grill sausage separately while contents in steaming pot soften
11. When ingredients in steaming pot are soft, mash just like mashed potatoes
12. Add salt and pepper to taste preference
12. Serve this wonderful and warming Dutch comfort food on a cold winter night!


As always with my food, I make enough for leftover and variations throughout the week to save time and costs. Here are two variation which I made throughout the week:




Kale and Sweet Potatoes Smash with Grilled Chicken
-Same recipe as above except substitute the potatoes with sweet potatoes and the sausage with grilled chicken.





Leftovers make a great breakfast variation. Kale, sausage, potatoes, onion, garlic, fried egg, toast and of course Cholula hot sauce!
