Tuesday May 21st I had a brick workout scheduled with the IronEdge Tri Team. We met at Rotary Park with a group of 8 at 9 am. How do 9 adults find time to work out for 3 hours on a Tuesday morning? When you live beautiful Yampa Valley, you make it happen! People just like me live in this town to enjoy this lifestyle. This was my third road ride in Steamboat. For me, this was my first, fair weather, long, road ride. We did 6 intervals on our way to Stagecoach Lake. On Saturday, March 8, 2014 a group of 5 brave individuals fittingly named “Snow Stoppin’ Us” competed in the Steamboat triathlon. (Stay tuned for the full race report on ActivePerformance.org). To celebrate our triumphant winter race we had a team dinner with our awesome supporters. We served a Pentathletes Pork Tenderloin, Roasted Romenesco, and Espinacas con Garbanzos. The highlight perfectly cooked pork was highlighted by the smoky and sweet blueberry chipotle sauce. This was paired quite nicely with the cumin flavored, Spanish inspired, espinacas con garbanzos. The baked romenesco finished off the meal with a little flare! Nothing like a healthy and hearty meal to share with friends and reminisce about the winter pentathlon. Boerenkool Met WorstConnecting to my Dutch roots, I set out to make out my first Dutch comfort food dish. This recipe was cooked during I was recovering from a cold and it definitely helped me feel better. In the Netherlands boerenkool usually contains potatoes and vegetables stewed and smashed together. I made a Boerenkool Met Worst Hutspot (Kale and Potato Smash with Sausage).The ingredients are simple and healthy:– One bunch of Kale   – (fresh then frozen overnight)– 2 handfuls of fingerling potatoes– 1 onion– 1 lb of Turkey Sausage– Garlic– Salt & Pepper– WaterMy variations on this dish call for:– Sweet Potatoes– Chicken– Eggs– Wheat ToastDirections:1.
